- Shredded chicken: For this recipe, I cook two chicken breasts in the slow cooker and shred. You can also shred a store-bought rotisserie chicken or use canned chicken. This recipe is a great way to use up leftover chicken.
- Buffalo sauce: A hot sauce with the perfect mix of sweet, sour, and spice that will leave a tingle on your tongue. My favorite brand is Frank's RedHot Buffalo Wings Sauce.
- Cream cheese: Adds a rich, creamy texture to balance the heat from the buffalo sauce.
- Blue cheese: Adds a bold, tangy flavor that pairs perfectly with buffalo sauce.
- Green onions: Provides a fresh, slightly sharp flavor to round out the dish. I use both the green and white ends of the green onions, also known as scallions.
- Shredded carrots: Adds a touch of sweetness and a subtle crunch to the filling.
- Dipping sauce (optional) Dip a crispy buffalo chicken eggroll in ranch dressing, blue cheese dressing, or extra buffalo sauce.
Variations
- Use a different cheese, such as shredded sharp cheddar cheese or mozzarella cheese as a substitute for blue cheese.
- Add herbs to the buffalo chicken filling for an extra burst of flavor. Herbs and spices like dill, garlic powder, and onion powder would be great additions.

How to Make Buffalo Chicken Egg Rolls
Step 1: In a large mixing bowl, combine the buffalo sauce and softened cream cheese until smooth. Add the shredded chicken, carrots, green onions, and blue cheese crumbles to the bowl. Mix everything thoroughly to create the buffalo chicken filling.
Step 2: Lay an egg roll wrapper on a clean, flat surface, positioning it like a diamond with the points facing north and south.
Spoon about 2 tablespoons of the buffalo chicken mixture onto the lower third of the wrapper, leaving space near the bottom to avoid overflow.
Step 3: Fold the bottom point of the wrapper over the filling, tucking it snugly around the mixture.
Step 4: Fold in the left and right corners of the wrapper, ensuring there are no gaps or holes at the edges. If needed, use your fingers to crease the corners for a tight seal.
Depending on the type of wrapper, you may need to dip your finger in water or egg wash and run it along the edges to help seal the wrapper.
Step 5: Roll the egg roll tightly from the bottom corner to the top corner. Make sure the top point sticks securely to the roll. If it doesn’t seal, dab a little water or egg wash on the seam to ensure it stays closed.
Step 6: Lightly spray the bottom of your air fryer basket with cooking spray (I recommend olive oil spray) to help crisp the egg rolls. Place the egg rolls in a single layer in the basket, leaving space between each one. Spray the tops of the egg rolls with additional cooking spray and sprinkle lightly with salt.
Flip the egg rolls halfway through cooking and air fry until golden brown and crispy.
Expert Tips
- Use fresh egg roll wrappers to prevent cracking when rolling.
- Soften cream cheese by leaving it on the counter at room temperature for about an hour before making this recipe. Softened cream cheese will blend more smoothly.
- Don’t overfill the egg roll. Use about 2 tablespoons of buffalo chicken filling per wrapper for the best results.
- Seal well. If you notice gaps in the egg rolls, use a little water to seal the edges tightly to keep the filling intact while cooking.
Storage

- 2 cups shredded chicken cooked
- 4 ounces cream cheese softened
- ½ cup buffalo sauce
- ½ cup blue cheese crumbles
- ⅓ cup shredded carrots
- ⅓ cup green onions sliced

Instructions
- Preheat the air fryer to 400°F.
- In a mixing bowl, prepare buffalo chicken filling by combining softened cream cheese and buffalo sauce. To the same bowl, add shredded chicken, blue cheese, carrots, and green onions. Mix well.
- Add 2 tablespoons of the buffalo chicken mixture to an egg roll wrapper and tightly form an egg roll. Repeat until all the filling is used. (Note: see post above for a step-by-step instructions with photos on how to roll an egg roll).
- Spray the air fryer basket with cooking spray and place the buffalo chicken egg rolls in a single layer. Spray the top of the egg rolls with cooking spray and sprinkle with salt.
- Air fry egg rolls for 6 minutes, flip, then cook an additional 6 minutes until they are lightly golden brown in color and have a crispy exterior.
Notes
- Depending on how much of the buffalo chicken filling you add to each egg roll, you my get slightly more or less than 8 egg rolls.
- Softened cream cheese will be easier to blend. Leave it on the counter at room temperature for about an hour before making this recipe.
- Fresh egg roll wrappers are best to prevent cracking when rolling.
- Be careful not to overcrowd the air fryer basket so you cook crispy egg rolls. You may have to air fry egg rolls in multiple batches.
- The buffalo chicken filling is hot right out of the air fryer. Let egg rolls sit for 5-10 minutes before serving.
- Bake in the oven at 400°F for 20-25 minutes, flipping halfway through.
