- Cotija cheese brings a salty, crumbly texture that complements the smokiness of the brisket. For a meltier option, go with cheddar cheese or Monterey Jack cheese.
Don't forget your favorite taco toppings! I like to keep things simple with minimal toppings like diced white onions, fresh cilantro, skillet charred corn, sour cream, pico de gallo, and a squeeze of fresh lime juice or cilantro jalapeno chimichurri for brightness.

Step 1: Heat a dry skillet to medium-high heat. Warm tortilla for about 20 seconds on each side until lightly charred.
