When I was searching for baked oatmeal recipes, I noticed many included banana, but I didn't have bananas on hand. So, I created this chocolate baked oats without banana. By making baked oatmeal without banana and using yogurt instead, this recipe has lower carbs and higher protein!

Ingredients
- Old Fashioned Rolled Oats - Quick cook oats will become soggy and steel cut oats will be undercooked in this breakfast casserole.
- Unsweetened Cocoa Powder - for a rich, chocolate flavor.
- Milk - Use your milk of choice. I have tested this recipe with whole milk, unsweetened almond milk, and unsweetened coconut milk - all work great!
- Eggs & Yogurt - since no banana is used in this baked oatmeal recipe, I use eggs and yogurt to bind ingredients and for added protein. I use plain Greek yogurt, but vanilla would be tasty as well.
- 100% Pure Maple Syrup - a healthier way to sweeten oats.
- Chocolate Chips - an essential ingredient in chocolate chip baked oats - I use semisweet chocolate chips.
- Vanilla Extract - for an added flavor boost.

How to Make Chocolate Baked Oatmeal
You will love making these healthy baked oats for a weekend brunch or meal prep for the week. It only takes 10 minutes to whip up this tasty meal to throw in the oven.
First, preheat the oven to 350 ºF and spray an 8x8 baking dish with nonstick cooking spray.
Step 1: In a large mixing bowl, add all dry ingredients (except chocolate chips) and stir to combine.
Step 2: In a medium sized mixing bowl, add eggs and yogurt and whisk together. Next, add all other wet ingredients and mix well.
Step 3: Pour the bowl of dry ingredients into the bowl of wet ingredients. Stir to combine. Add chocolate chips and fold into the mixture.
Step 4: Pour the mixture into the prepared baking dish. Make sure the mixture is evenly spread out in the dish. I also like to sprinkle additional chocolate chips on top before baking.
Step 5: Bake in the oven for 30-35 minutes until the middle of the oats have set. You will know when the oats have set when a toothpick or butter knife comes out clean from the center. My oven cooks chocolate baked oatmeal perfectly in 33 minutes.
Let chocolate baked oats cool for 5-10 minutes before slicing and serving.
Swaps & Substitutions
- You can substitute ยฝ cup of coconut oil or butter, or one mashed banana instead of yogurt.
- Honey can be used instead of maple syrup.
- Chop up your favorite chocolate bar or use dark chocolate instead of chocolate chips.
- Drizzle peanut butter or maple syrup over the top of this chocolate baked oatmeal recipe for a flavor boost.
- For vegan baked oats, substitute flax eggs and use dairy free milk.
- To make protein baked oats, add a scoop of unflavored or chocolate protein powder to the dry ingredients.
How to Store & Freeze
Chocolate baked oatmeal should be stored in an airtight container in the refrigerator for up to 5 days. To reheat, put an individual serving size on a plate and microwave for 30 seconds.
You can freeze this baked chocolate oatmeal recipe in a freezer safe container for up to 3 months. Thaw in the refrigerator before reheating.

- Bake at 350 ºF for 30-35 minutes until the center has set. Let cool for 5-10 minutes before slicing and serving.

It tastes like chocolate flavored oatmeal with bursts of melted chocolate chips. You can reheat it or eat it cold. I prefer to reheat it. To reheat, put an individual serving size on a plate and microwave for 30 seconds.
