Ingredients

old fashioned rolled oats

unsweetened cocoa powder

baking powder

salt

eggs

yogurt
plain or vanilla
1 ¼

milk
⅓
cup
100% pure maple syrup
2
teaspoons
vanilla extract
½
cup
chocolate chips
plus more to sprinkle on top
Instructions
Preheat oven to 350 ºF and spray an 8x8 baking dish with nonstick cooking spray.
In a large mixing bowl, add oats, cocoa powder, baking powder and salt. Stir to combine.
In a medium sized mixing bowl, add eggs and yogurt and whisk together. Next, add milk, maple syrup, and vanilla extract. Stir to combine.
Pour the bowl of wet ingredients into the bowl of dry ingredients. Mix well. Add chocolate chips and fold them into the mixture.
Pour the mixture into the prepared baking dish. Spread the mixture evenly in the dish. Sprinkle additional chocolate chips on top before baking.
Bake at 350 ºF for 30-35 minutes until the center has set. Let cool for 5-10 minutes before slicing and serving.
Notes
To make protein baked oats, add a scoop of unflavored or chocolate protein powder.
You will know when the oats are ready when a toothpick or butter knife comes out clean from the center.
For transparency, I use a clear glass 8x8 baking dish and my oven cooks chocolate baked oatmeal perfectly in 33 minutes.
