About Jalapeno Simple Syrup
Simple syrup is a liquid sweetener made by dissolving sugar in water, typically using a 1:1 ratio. This means you will use equal parts water and sugar. The mixture is heated gently until the sugar fully dissolves, resulting in a smooth, pourable syrup. In this recipe, fresh jalapeño slices are simmered with the sugar and water. Making simple syrup with jalapenos adds an extra layer of flavor by infusing the syrup with a hint of spice.
I love a spicy cocktail, so I created this syrup to be added to my skinny spicy margarita recipe and Minute Maid limeade margarita recipe. Jalapeno infused simple syrup is ideal for cocktails like spicy margaritas with tequila, mojitos, or a spicy gin and tonic.
With just three ingredients, this recipe is easy to prepare and lasts in the fridge for up to two weeks, making it a convenient way to add flavor to drinks anytime.
Ingredients
- Sugar not only sweetens the syrup but also balances the heat of the jalapeños, creating a perfect blend of spicy and sweet. I use granulated white sugar.
- Water serves as the essential base that dissolves the sugar and extracts the heat and flavor from the jalapeños.
- Jalapeño peppers add a fresh, peppery kick to the syrup. They bring spicy heat and a natural, vibrant flavor. If you are a jalapeno lover, try my creamy jalapeno sauce on savory dishes!

How to Make Jalapeno Simple Syrup
Step 1: Add freshly sliced jalapenos, 1 cup sugar, and 1 cup water to a small saucepan. Bring to a simmer on medium heat and stir until the sugar dissolves.
Step 2: Remove the pan from the heat and steep jalapenos in the syrup for 10 minutes before straining into an airtight container or glass jar. Let the jalapeño syrup cool to room temperature before refrigerating.
Serving Suggestions
Cocktails: I love to make cocktails with jalapeno simple syrup! Stir it into margaritas, mojitos, or a spicy twist on classic cocktails like the Moscow mule or gin and tonic.
Lemonade and Iced Tea: Add a splash to homemade lemonade or iced tea for a refreshing kick.
Expert Tips
Adjust the spice level. Use fewer jalapeño slices or simmer the syrup for a shorter time to achieve a milder flavor. You can also remove the seeds before slicing the jalapeños, as they contain much of the heat.
Fresh is best. Fresh jalapeños give the best flavor and heat. Avoid using pickled or jarred jalapeños as they contain vinegar that can alter the taste.
Simmer, don't boil. Gently simmer the spicy syrup rather than boiling it. This prevents the syrup from becoming too thick and allows the flavors to infuse evenly.
Strain carefully. For a smooth syrup, strain out the jalapeño slices and any seeds using a fine-mesh sieve.
Storage
Allow this spicy simple syrup to cool before storing in an airtight container. I recommend using these pretty glass jars or mason jars for easy storage in the refrigerator.
Properly stored, the jalapeño simple syrup will last up to 3-4 weeks in the fridge. For easy tracking, label the jar with the date it was made to ensure freshness and prevent using it past its prime.
To extend the shelf life even further, you can freeze simple syrup in ice cube trays. This allows you to thaw small portions as needed, so you always have fresh syrup on hand!

Equipment
- Small saucepan
Ingredients
- 1 cup water
- 1 cup granulated sugar
- 2 jalapenos thinly sliced
Instructions
- In a small saucepan over medium heat, combine the water, sugar, and jalapeño slices, stirring occasionally as the mixture heats. Allow it to simmer for 3-5 minutes, or until the sugar has fully dissolved.
- Remove the saucepan from heat, and let the jalapeños steep in the syrup for 10 minutes. Strain out the jalapeño slices, then allow the syrup to cool completely. Once cooled, transfer it to an airtight container and store in the refrigerator.
Notes
- Remove the jalapeno seeds for less spice.
- You can control the spice level by adjusting the number of jalapeño slices or the infusion/simmer time. Make it as mild or as fiery as you like for a customized experience.
- Use fresh jalapeños for optimal flavor and heat. Avoid pickled or jarred jalapeños, as their vinegar content can affect the taste of the syrup.
