Garlic Butter Crust
1Tablespoonbuttermelted
¼teaspoongarlic powder
½teaspoonparmesan cheesegrated
Instructions
Preheat oven to 425 °F. Place flatbread on a baking sheet lined with parchment paper.
In a bowl, add chicken and 1 cup of BBQ sauce. Stir to coat chicken in sauce and set aside. (see notes for cooking options)
In a small bowl, combine garlic butter crust ingredients. Using a pastry brush, brush the garlic butter around the edges of the flatbread.
Add a layer of ¼ cup barbecue sauce to each flatbread leaving a rim around the edges for the crust. Next, add layers of cheddar and mozzarella cheese over the sauce.
Spread BBQ chicken and red onions evenly on each flatbread and top with more cheese. Bake at 425°F for 8-10 minutes. Watch closely towards the end of baking to ensure the crust doesn't burn.
Let the flatbread sit for a couple minutes before slicing. Top with chopped cilantro, red pepper flakes, parmesan, and a drizzle of BBQ sauce, if desired. Serve immediately.
Notes
If you cook more than one flatbread at a time or use a different size, cook times will vary. Watch oven closely in the last couple minutes of baking to avoid burning the crust.
You don't need to measure all of the ingredients. I usually just eyeball it based on my personal preferences.
Cooked chicken 3 ways:
Slow Cooker Method: Place chicken breasts in a slow cooker along with a jar of BBQ sauce. Cook on high for two and a half hours. Once done, remove the chicken from the slow cooker and shred it using two forks. Return the shredded chicken to the slow cooker and mix well to coat it in the sauce.
Rotisserie Chicken Method: Purchase a whole rotisserie chicken from the grocery store. Disassemble the chicken and shred or chop the meat into bite-sized pieces.
Leftover Chicken Method: Utilize leftover chicken by shredding or chopping it into smaller pieces.
