In a small saucepan on medium heat, add water, sugar, and ground cinnamon. Stir to combine and simmer until sugar dissolves. Once sugar has dissolved, reduce heat to low for 5 minutes. Stirring occasionally.
Strain cinnamon simple syrup with a fine mesh sieve to remove excess cinnamon particles. You may need to double strain.
Allow liquid to cool completely before storing it in an airtight container in the refrigerator.
