Chocolate Baked Oatmeal

Chocolate Baked Oatmeal is an easy breakfast meal prep or healthy dessert. Chocolate baked oats fill you up and satisfy your sweet tooth.

Ingredients

  • 2 cups old fashioned rolled oats
  • ¼ cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 2 eggs
  • ½ cup yogurt plain or vanilla
  • 1 ¼ cup milk
  • cup 100% pure maple syrup
  • 2 teaspoons vanilla extract
  • ½ cup chocolate chips plus more to sprinkle on top

Instructions

  • Preheat oven to 350 ºF and spray an 8x8 baking dish with nonstick cooking spray.
  • In a large mixing bowl, add oats, cocoa powder, baking powder and salt. Stir to combine.
  • In a medium sized mixing bowl, add eggs and yogurt and whisk together. Next, add milk, maple syrup, and vanilla extract. Stir to combine.
  • Pour the bowl of wet ingredients into the bowl of dry ingredients. Mix well. Add chocolate chips and fold them into the mixture.
  • Pour the mixture into the prepared baking dish. Spread the mixture evenly in the dish. Sprinkle additional chocolate chips on top before baking.
  • Bake at 350 ºF for 30-35 minutes until the center has set. Let cool for 5-10 minutes before slicing and serving.

Notes

  • To make protein baked oats, add a scoop of unflavored or chocolate protein powder.
  • You will know when the oats are ready when a toothpick or butter knife comes out clean from the center.
  • For transparency, I use a clear glass 8x8 baking dish and my oven cooks chocolate baked oatmeal perfectly in 33 minutes.
