Easy Chipotle Mayo Sauce

Ingredients

  • ½ cup mayonnaise
  • 2-3 chipotle peppers in adobo sauce
  • 1 tablespoon lime juice freshly squeezed
  • ¼ teaspoon garlic powder
  • ¼ teaspoon salt

Instructions

  • In a small food processor add mayonnaise, chipotle peppers with desired amount of sauce, lime juice, garlic powder, and salt.
  • Pulse food processor until mixture is smooth (some chipotle chucks may remain). Scrap down the sides of the food processor and pulse again as needed.

Notes

  • Serve chipotle mayo sauce with fish tacos, as a spread on sandwiches and burgers, or as a dip for fries and veggies.
  • Use more or less chipotles and/or adobo sauce, depending on spice level preference. You can also add a pinch of chili powder or chipotle powder for extra heat.
  • Give the ingredients a chance to rest and meld before serving. This isn’t necessary, just a plus if you have the time.
