Spicy Spaghetti Arrabiata

Spicy Spaghetti Arrabiata is a spicy pasta recipe. This fresh arrabiata sauce, spicy tomato sauce, uses only clean ingredients and is vegan.

Equipment

Ingredients

  • ½ lb. spaghetti reserve ¼ cup of pasta water
  • 2 lbs. whole Roma tomatoes 6-8 tomatoes
  • ½ cup extra virgin olive oil
  • 4 cloves garlic minced
  • 1 teaspoon red pepper flakes
  • 1 teaspoon basil dried
  • 1 teaspoon oregano dried
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions

  • Preheat your oven to 400°F. Add salt to a pot of boiling water for the pasta, and bring it to a boil.
  • In a mixing bowl, combine the oil, herbs, red chili flakes, spices, salt, black pepper, and garlic.
  • Slice the tomatoes in half, coat each in the oil mixture, and place them cut-side up on a rimmed baking sheet. Pour any leftover oil over the tomatoes. Place the tomatoes in the oven and roast them for 30 minutes or until softened.
  • While the tomatoes are in the oven, cook spaghetti in a pot of water according to the package instructions. Reserve ¼ cup of the pasta water for later. Drain the rest of the water and set the spaghetti aside.
  • Add the cooked tomatoes, excess oil, and reserved pasta water to a large mixing bowl. Smash the tomatoes using a potato masher until they become crushed tomato sauce. Check the seasoning and adjust if necessary.
  • Add the sauce to the cooked spaghetti and toss to combine. Serve with fresh parmesan cheese, if desired.

Notes

  • You can customize the spice level by using more or less of the red pepper flakes.
  • Use a rimmed baking sheet to keep the juices in the pan.
  • If you don't have a potato masher, you can use a fork, hand blender, or food processor to crush the tomatoes.
  • Add a little crispy bacon, shrimp, or meatballs to your pasta sauce for protein.
